- 1 bunch green onions, white and light green parts, chopped
- 1 - 5 oz. package baby spinach
- 1 - 4 oz. can diced green chiles (check for 0 sugar)
- 2 1/2 cups liquid egg whites
- 1/4 tsp. red pepper flakes
- 1 tsp. garlic powder (I use Flavor God Garlic Lovers)
- 1/4 tsp. onion powder
- Freshly ground black pepper
- Olive oil spray
Preheat oven to 350F.
Heat a medium skillet over medium heat and spray with olive oil spray. Add the green onions and saute until starting to soften, 2 minutes. Add the spinach and continue to cook until the spinach wilts. Add the diced green chiles and stir to combine.

Spray a 9x13 baking dish with olive oil spray and transfer the cooked veggies to it. Spread them out to evenly cover the bottom of the dish.
Pour the egg whites into a bowl and season with the red pepper flakes, garlic, onion powder and black pepper. Whisk to combine.
Pour the seasoned egg whites over the cooked veggies. Pop it into the oven and cook for about 25 minutes, until cooked through and starting to brown. Divide into 5 portions and enjoy!
