- 5 oz. dry Healthy Carb Living rotini pasta
- 1 medium tomato, chopped
- 1 medium red bell pepper, chopped
- 1/4 large red onion, chopped
- 1 - 2.25 oz. can sliced black olives, drained
- 1/4 cup Best Foods vegan mayonnaise
- 1 tbsp. white wine vinegar
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. dried oregano
- 1/4 tsp. crushed red pepper flakes
- 1/4 tsp. salt
- freshly ground black pepper
Cook the pasta according to package directions.
In a large bowl, combine the tomato, bell pepper, onion and olives. In a small bowl, whisk together the vegan mayonnaise, vinegar and seasonings.
Mix everything together and chill until you're ready to enjoy!
Yields six 1-cup servings: 148 calories, 3g protein, 3g fiber, 8g fat, & 18 net carbs each.
