- 3 large very ripe bananas, mashed
- 1 cup fresh blueberries
- 1/2 cup chopped pecans
- 2 tbsp. unsweetened apple sauce
- 1 1/4 cups all purpose flour
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 2 tbsp. butter, softened
- 1/2 cup light brown sugar, packed
- 1 egg, beaten
- 1 tsp. vanilla extract
Preheat oven to 350F. Lightly spray a loaf pan with avocado oil spray.
In a medium bowl, combine flour, baking soda and salt and mix with a wire whisk. Set aside.
Cream butter and sugar with an electric mixer. Add egg, bananas, apple sauce, vanilla and cinnamon and beat at medium speed.
Add flour mixture and blend at low speed until combined.
Fold in the blueberries and pecans and pour batter into the prepared loaf pan. Bake in the center rack for 55 minutes, until a toothpick inserted in the center comes out clean.
Let the bread sit in the pan for 20 minutes. Move to a wire rack to continue to cool.
Slice the bread when it's room temperature.
