- 1 red onion, chopped
- 1 red bell pepper, seeded & chopped
- 1 cup chopped baby carrots
- 1 tbsp. chopped garlic
- 1 - 28 oz. can petite diced tomatoes
- 1 tbsp. tomato paste
- 1 cup frozen corn
- 2 - 15 oz. cans black beans, rinsed & drained
- 1 cup dry lentils
- 1/2 cup dry quinoa
- 6 cups reduced sodium vegetable broth
- 1 tbsp. coriander
- 1 tbsp. cumin
- 1 tbsp. oregano
- 3 tbsp. chili powder
- 1 tsp. salt
- freshly ground black pepper
Spray your crock pot with cooking spray. Add all ingredients and give it a good stir.
Cover and cook on low for 6 hours.
Yields six 2 1/8 cup servings: 355 calories, 18.7g protein, 1.5g fat, 17.5g fiber & 49.5 net carbs each.
Enjoy with avocado chunks, vegan (or regular) cheese and chopped green onions.
