Chicken "Pizza" Roll-Ups


  • 1 package thinly sliced chicken breast filets (4-6 filets)
  • 20-25 slices turkey pepperoni
  • 10-12 slices mozzarella cheese
  • 1 - 24 oz. jar Classico Four Cheese pasta sauce (or your favorite)
  • Salt & Freshly ground black pepper
Preheat oven to 350F.

Grease a 9x13 baking dish with cooking spray.  Spoon a thin layer of sauce over the bottom of the pan.

Season each filet with salt and freshly ground black pepper.  Lay 3-4 slices of pepperoni down the length of each filet.  Top with a slice of mozzarella cut in half and spoon a small amount of sauce over the top.  Roll up tightly, securing with toothpicks.  Spoon remaining sauce over the top of the chicken.

Cover and bake 35 minutes, or until chicken is cooked through.  Top each roll-up with a slice of cheese and bake uncovered 5 minutes, or until cheese is melted.

Egg Muffin Cups


  • 8 eggs
  • 1/2 cup non-fat milk
  • 5 slices Canadian bacon, chopped
  • 1/8 of a yellow onion, chopped (about a 1/4 cup)
  • 3/4 cup shredded reduced fat cheese
Preheat oven to 375F.

Spray a 12 cup muffin tin with cooking spray.  Sprinkle each cup with chopped onions, bacon and shredded cheese.  In a bowl, whisk together the eggs and milk.  Pour the egg mixture into each muffin cup, filling it about 2/3 full.

Bake for 20 minutes, or until set. Let cool on a wire rack.
