Hawaiian Apple Banana Oatmeal Muffins (Vegan)

  • 2 1/2 cups rolled oats
  • 1/2 tsp. salt
  • 1/3 cup vegan chocolate chips
  • 1/4 cup chopped unsalted macadamia nuts
  • 5 apple bananas, mashed (about 1 1/4 cups) 
  • 2 1/2 tbsp. maple syrup
  • 1 cup water
  • 1/8 cup avocado oil
  • 1 1/4 tsp. pure vanilla extract
  • avocado oil spray

Preheat oven to 380F.  Spray 12 silicone muffin cups with avocado oil spray.

Combine the oats, salt, chocolate chips and nuts in a large mixing bowl.  Stir to mix well.


Beat the mashed apple bananas, syrup, water, oil and vanilla in a food mixer and blend until smooth.


Pour the wet ingredients into the dry and stir to mix well.


Spoon the mixture into the muffin cups, pop in the oven and bake 21 minutes.  Turn broiler on and broil for 1.5 - 2 minutes.  Let them cool for 10 minutes in the muffin cups before transferring onto a wire cooling rack.

Hawaiian Apple Banana Muffins (Vegan & Gluten Free)

  • 2 cups almond flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 4 apple bananas, mashed (about 1 cup)
  • 3 tbsp. Just Egg
  • 1/4 cup maple syrup
  • 1 tsp. pure vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/4 cup chopped unsalted macadamia nuts
  • avocado oil spray

Preheat oven to 350F.

Spray 12 silicone muffin cups with avocado oil spray. Or, line a muffin pan with muffin liners.

Whisk together the almond flour, baking powder and baking soda.


Cream together the bananas, Just Egg, syrup and vanilla in a mixer or blender.  Blend until smooth.

Add the wet ingredients to the dry ingredients and fold in the chocolate chips and nuts.


Distribute the batter into the muffin cups.  

Bake 18-20 minutes, until the muffins are golden on top and a toothpick comes out clean.  Let muffins cool in the cups for 10 minutes and then transfer to a wire rack to cool.
