- 1 cup uncooked Southwest orzo (use regular orzo if you can't find Southwest)
- 1 cup frozen corn, thawed and drained
- 1 - 15oz. can black beans, rinsed and drained
- 3 green onions, white & light green parts only, chopped
- 1 peeled avocado, cut into chunks
- 1/4 cup low-fat buttermilk
- 1 tbsp. freshly squeezed lime juice
- 2 tbsp. light sour cream
- 2 tbsp. light mayonnaise
- 3 tbsp. chopped fresh parsley
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1 tsp. crushed garlic
Meanwhile, combine all of the dressing ingredients and mix well with a fork or whisk. Pour dressing over the orzo mixture and toss.
Serve with fresh avocado. Enjoy!!
