- 1 - 14.5 oz. can petite diced tomatoes with green chiles
- 1 - 15 oz. can black beans, rinsed and drained
- 1 - 14.5 oz. can reduced sodium chicken broth
- 8 oz. frozen corn
- 1 small red onion, chopped
- 1/4 cup minced fresh cilantro
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. cumin
- 1 tsp. cayenne pepper
- 1 1/2 lbs. boneless, skinless chicken breast
- salt
Take the chicken out and shred it using two forks. Put shredded chicken back into slow cooker and mix well.
Serve with your favorite toppings such as cheese, sour cream, jalapenos, black olives, avocado.
