- 1 sweet potato, peeled and cubed
- 1 yellow onion, chopped
- 3 carrots, peeled and chopped
- 1 tbsp. chopped garlic
- 1 - 7 oz. can chopped mild green chiles
- 2 - 14 oz. cans small white beans, drained and rinsed
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. paprika
- 1/2 tsp. crushed red pepper
- 2 tbsp. grated fresh ginger
- 1 tbsp. fresh minced parsley
- 1 tbsp. apple cider vinegar
- 32 oz. reduced sodium chicken broth
- 4 cups loosely packed spinach
- 1 cup frozen peas
Serve with grated parmesan cheese.
