Egg Muffins





• 7 eggs
• 1 cup egg whites
• Shredded reduced fat Colby jack cheese
• 1 small zucchini, chopped
• 1 bunch green onions, white parts only, chopped
• 1/2 red bell pepper, chopped


Preheat oven to 375 F.

Spray a 12 muffin pan with cooking spray.

In the bottom of the muffin cups layer diced vegetables and cheese. Beat eggs in a bowl and pour into muffin cups.

Bake 20-30 minutes until muffins have risen and are slightly browned and set.
