Italian Pork Chops - A One Pot Meal

  • 1 medium yellow onion, chopped
  • 3 - 4 large pork rib chops, bone-in (about 2 lbs)
  • 4 tsp. chopped garlic
  • 2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • Freshly ground black pepper
  • 1 - 14.5oz. can petite diced tomatoes, undrained
  • 2 tbsp. balsamic vinegar
  • 2 medium zucchini, halved lengthwise and cut into 1/2" pieces
Place chopped onion into a crock pot that has been drizzled with olive oil. 

Trim the fat from the pork and place the chops on top of the onion.  Sprinkle with chopped garlic, Italian seasoning, salt and pepper.  Pour tomatoes and vinegar over the top.  Cover with zucchini.

Cover crock and cook on for 8 - 9 hours.

Serve over Quinoa or your favorite grain.  Enjoy!
