- 1 cup quinoa, rinsed thoroughly
- 1 can white beans, rinsed and drained
- 1/4 red onion, minced
- 1/4 cup Italian parsley leaves, minced
- 1 red bell pepper, chopped
- 2 tsp. ground cumin
- 1 tbsp. red wine vinegar
- 2 tbsp. olive oil
- 1 tsp. salt
- Freshly ground pepper, to taste
Meanwhile, combine beans, onion, parsley and red bell pepper in a large bowl. Once quinoa is cooked and has cooled slightly add it to the bowl. Add seasonings, vinegar and oil and mix well.
Let stand in the refrigerator until you are ready to serve.
