- 1 tbsp. olive oil
- 2 tbsp. tomato paste
- 2 tbsp. chili powder
- 2 tsp. ground cumin
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 bunch green onions, white parts only, chopped
- 1/2 small red onion, chopped
- 1 tsp. salt
- 1 - 20 oz. package lean ground turkey
- 2 - 14.5 oz cans petite diced tomatoes with green chiles
- 2 cups reduced sodium chicken broth
- 2 - 14.5 oz. cans black beans, rinsed and drained
- Sour Cream and Shredded Cheese for topping
Stir in the tomatoes, broth and beans into the pot and bring to a simmer. Cook, stirring occasionally, until thickened, 20 minutes.
Serve with a dollop of sour cream and shredded cheese.
