- 2½ cups Blanched Almond Flour
- 1½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 teaspoon baking soda
- 3 large eggs
- ½ cup organic blue agave nectar
- ¼ cup whole milk plain Greek yogurt
- 3 very ripe bananas, mashed
- 1 teaspoon pure vanilla extract
Preheat oven to 350ºF. Line a large bread pan
with parchment paper.
In a large bowl mix
together the almond flour, cinnamon, nutmeg, salt, and baking soda.
In a medium bowl, whisk the eggs and add in the agave, yogurt, mashed bananas, and vanilla.
Whisk together until combined.
Stir the wet ingredients
into the dry ingredients and mix until combined.
Pour the batter into the bread
pan and bake for 50 minutes, or until the center is firm and a knife inserted
comes out clean.
Let it cool slightly
before removing it from the pan. Slice
into 12 pieces.
