Eat The Rainbow Pasta Primavera (Vegan, Soy & Gluten Free)

  • 1 tbsp. oil oil
  • 2 cups chopped organic broccoli florets
  • 1 organic red bell pepper, chopped
  • 1 organic yellow bell pepper, chopped
  • 1 organic orange bell pepper, chopped
  • 1 cup chopped organic red onion
  • 1 organic zucchini, chopped
  • 1 organic yellow crooked neck squash, chopped
  • 2 tbsp. chopped garlic
  • 1 - 24 oz. jar Rao's Arrabbiata sauce
  • 1 tsp. marjoram
  • 1 tsp. oregano
  • 1 tsp. fennel seed
  • 1/2 tsp. crushed red pepper flakes
  • 1 - 12 oz. box brown rice pasta

Heat a pot over medium heat and add the olive oil to warm.  Add the broccoli, bell peppers, onion, zucchini, squash and garlic, and cook, stirring occasionally for about 10 minutes.


Add the seasonings to the pot and stir to combine.  Add the jar of sauce and allow to simmer while you cook the pasta according to package directions.


Serve with vegan, soy & gluten free grated parmesan.
