Vegan Cauliflower Fried Rice (Gluten & Soy Free)


  • 1 tbsp. olive oil
  • 1 - 10 oz. package Mirepoix Mix (sold at Whole Foods & Trader Joe's)
  • 1 tbsp. chopped garlic
  • 1 - 16 oz. package organic riced cauliflower (fresh, not frozen)
  • 1 cup frozen organic green peas
  • salt & freshly ground black pepper
  • crushed red pepper flakes
  • 2 tbsp. reduced sodium soy free, gluten free "soy" sauce (or coconut aminos)
  • 1/4 cup chopped cashews, for serving
  • diced green onions, for serving
Heat a skillet over medium heat and add the olive oil, allowing it to warm.  Add the Mirepoix and garlic and cook until starting to soften, about 4-5 minutes.  


Add the riced cauliflower and green peas to the pan and mix everything together.  Lightly season with salt, freshly ground black pepper and crushed red pepper flakes and stir to mix well.  Add the "soy" sauce to the mixture and give it a good stir. 


Cover the pan and turn heat to low.  Cook until cauliflower is softened, 6-8 minutes. Stir everything to mix well and remove from the heat.


Yields 4 yummy servings: 101 calories, 3g fat, 5g protein, 6g fiber & 8 net carbs each.


Serve with chopped organic cashews and diced organic green onions.  This adds 160 calories. Yum!
