Light and Delicious Egg Salad


  • 4 eggs, hard boiled, peeled and chopped
  • 2 celery stalks, chopped
  • 1 tbsp. chopped green onions
  • 3 tbsp. Greek yogurt
  • 2 tsp. champagne mustard
  • Salt & freshly ground black pepper
Put all ingredients into a bowl and mix well.  Season with salt & pepper. Chill and divide into two servings.  Enjoy!

Great for grab and go lunches on a busy week!
