Crock Pot Tex Mex Veggie Quinoa Soup

  • 1 cup dry quinoa
  • 6 cups reduced sodium vegetable broth
  • 1 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 - 14.5 oz. can diced tomatoes
  • 1 - 4.5 oz. can mild chopped green chiles
  • 1 - 14 oz. can corn, drained
  • 2 - 15 oz. cans black beans, rinsed and drained
  • 1 tbsp. chili powder
  • 2 tsp. cumin
  • 2 tsp. garlic powder
  • 1 tsp. coriander
  • 2 bay leaves
  • freshly ground black pepper

Spray your crock pot with cooking spray and add all ingredients to it.  Give it a good stir and set to low for 5 1/2 hours.


Serve with some shredded vegan (or regular) cheese and avocado chunks!
