🌱 🌮 Taco Pasta 🌮 🌱


  • 1 - 14.5 oz. box Protein+ Rotini pasta
  • Avocado oil cooking spray
  • 1 cup chopped green bell pepper
  • 1/2 cup chopped yellow onion
  • 1 tbsp. crushed garlic
  • 1 - 15 oz. can black beans, rinsed and drained
  • 1 - 10 oz. can corn, drained
  • 2 tbsp. taco seasoning
  • 1 tsp. chili powder
  • 1 tsp. ground coriander
  • 3 cups salsa

Cook the pasta according to package directions.

Meanwhile, heat a medium sized pot over medium heat and generously spray with cooking spray.  Add the bell pepper, onion and garlic, and cook until starting to soften, about 5 minutes.


Add the beans and corn to the pot and stir to combine.  Pour in the salsa and add the seasonings.  Stir to mix well.  Bring to a simmer and allow to simmer for 5 minutes.


Add the cooked pasta to the pot, stir to mix well.  Continue to cook for 2-3 minutes.


Enjoy!  Yields six 1.5 cup servings:  361 calories, 1 gram fat, 61 net carbs, 17 grams protein


Serve with a sprinkling of shredded vegan (or regular) cheese.
