Zesty Bean Salad


Salad:
  • 1 - 15 oz. can black beans, rinsed and drained
  • 1 - 15 oz. can small white beans, rinsed and drained
  • 1 - 15 oz. can kidney beans, rinsed and drained
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 1/4 Italian parlsey leaves, minced
Dressing:
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • juice from 1 lime
  • 2 tsp. salt
  • 1 tsp. minced garlic
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • 2 tbsp. Cholula hot sauce
In a large bowl, combine all of the salad ingredients.

In small bowl combine all of the dressing ingredients.

Mix everything together and keep in refrigerator to cool.
